What’s for Lunch?

I’m going to be honest…I’m obsessed with avocados. I even got my parents to love them and now they’re always stocked in the kitchen. Adding them into salads, sandwiches, burgers, and even just as a side sprinkled with a bit of lime/lemon and salt — mmmhmmm, delicious!

This brings me to today’s lunch, which obviously included avocado ;).

I’m trying to make small changes in my eating habits over time, (slow and steady wins the race, right?). So instead of drastically revamping the way I eat, I’m starting small, like swapping out sodas for water and ice cream for Greek yogurt, to help them stick. And so today, I tried out a veggie sandwich for lunch with ingredients I already had in the fridge.

Now, my mom always says that salads should be colorful so that you’re getting a variety of vitamins and nutrients from the healthy greens and veggies. I take that advice and try to apply it to all dishes. So today, when I was craving a sandwich after a 30 min. cardio workout, I did my best to make it “colorful” with avocados,  sliced roma tomatoes, mozzarella cheese, and a bit of dijon mustard, all on wheat bread.

Wow, it was delicious! Sometimes, I forget how tasty a simple sandwich can be, especially when most of the ingredients are fresh produce.  I also really love Greek salads, and now I’m try to figure out how I can a Greek salad-style sandwich…maybe as a panini? 😉

    • Seriously they do go with everything — I feel like they’re on the fine line between fruits and veggies, so I can have them with basically any type of dish! Haha, I’m always craving them too!

  1. Oh, you’ll want to hear about my California Avocado-sponsored lunch in my post tomorrow. 😉 I’m more of a salad person these days. Today I’ve got mixed baby greens, fresh herbs, a slice hard cooked egg, chickpeas and avocado!
